Salad with mandarin oranges and Camembert.
Ingredients
- Red Grape Juice 15 fl oz
- Cinnamon 1 piece
- Cardamom 3 pieces
- Star anise 1 piece
- Clove 1 piece
- Mandarins 2 pieces
- Camembert cheese 5 oz
- Arugula 0 oz
- White Balsamic Cream 0 oz
- Sugar to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Pour the wine into a saucepan, add cinnamon, star anise, cardamom, cloves, and the peel of one mandarin. Bring to a boil, simmer for 5 minutes, then strain and return to the heat.
Step 2
Continue to simmer the wine, adding balsamic cream and a bit of sugar. Reduce the wine by about 80%. Remove the sauce from heat and let it cool.
Step 3
Separate the mandarins into segments and cut each segment in half; cut the camembert into pieces of a similar size.
Step 4
Pour a little sauce onto the bottom of the plate, place the arugula on top, then add pieces of cheese and mandarin. Season with salt and pepper to taste.
