  • Pitted olives 0 oz
  • Halloumi Cheese 5 oz
  • Mint 0 oz
  • Parsley 0 oz
  • Dill 0 oz
  • Sumac a pinch
  • Coarse Salt 0 oz
  • Olive Oil to taste

Remove the cores and seeds from the peppers, as well as any white parts. Drizzle the peppers with olive oil and place them in an oven preheated to 390°F for 25 minutes. Then transfer them to a suitable container and cover with plastic wrap, allowing them to cool.

Slice the halloumi into fairly thick pieces and fry on both sides in olive oil until golden brown. Once cooked, transfer the cheese to paper towels to remove excess grease.

Peel the cooled peppers and cut them into large lengthwise strips.

Chop the herbs, mix them with the olives and roasted peppers, add a little salt and pepper, and stir.

Place the fried cheese on a plate, add a mixture of peppers and olives beside it, sprinkle with sumac, and garnish with sprigs of dill and mint.
