Salad with Cottage Cheese Balls and Shrimp
Ingredients
- Cottage cheese 5 oz
- Shrimp 15 oz
- Eel ½ bunch
- Lemon 2 pieces
- Olive Oil 0 fl oz
- Scallions 4 stalks
- Paprika 1 teaspoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Pour boiling water over the shrimp for 2–3 minutes.
Step 2
Drain the water. Peel the shrimp from the heads and shells.
Step 3
Separate the lettuce into leaves, rinse with cold water, and dry on a towel.
Step 4
Peel one lemon and cut it into wedges.
Step 5
Squeeze the juice from the other lemon and grate the zest.
Step 6
Finely chop the green onion.
Step 7
Pass the cottage cheese through a sieve, season with salt and pepper to taste, and mix well.
Step 8
Form small balls from the cottage cheese mixture and refrigerate for 20 minutes.
Step 9
Roll a third of the balls in lemon zest, a third in paprika, and the remaining balls in chopped green onion.
Step 10
While the balls are cooling, prepare the dressing: mix lemon juice with olive oil and whisk vigorously.
Step 11
In a chilled dish, arrange the lettuce leaves, top with shrimp, drizzle with dressing, place the cottage cheese balls, lemon wedges, and again shrimp, drizzle with dressing, and serve.
