Salad with bresaola and strawberry dressing
Ingredients
- Bresaola Ham 0 oz
- Lollo Rosso 5 oz
- Arugula 0 oz
- Parmesan Cheese 5 oz
- Water 5 fl oz
- Blue Cheese 0 oz
- Lecithin 0 oz
- Strawberry 5 oz
- Olive Oil 0 fl oz
- Balsamic Vinegar 0 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Bring the water to a boil and pour it over the grated Parmesan cheese, stir, cover with foil, and place in a warm spot for 30 minutes.
Step 2
Blend the strawberries with vinegar, oil, salt, and pepper. Then, strain the mixture through a sieve.
Step 3
Strain the Parmesan water, add lecithin, and blend using an immersion blender on the lowest speed. Place in the refrigerator for 20 minutes.
Step 4
Cut the blue cheese into small cubes.
Step 5
Spread a small amount of strawberry dressing on a plate, place a slice of bresaola on top, add a few leaves of salad, drizzle with dressing again, add some cubes of blue cheese, a few arugula leaves, a couple more slices of bresaola, drizzle with dressing once more, layer with salad, and continue to build a tall, fluffy tower.
Step 6
Blend the chilled Parmesan water again at low speed until foam forms. Use this foam to garnish the finished salad.
