Salad with Bacon and Tomato Salsa
Ingredients
- Tomatoes 25 oz
- Scallions 2 bunches
- Garlic 1 head
- New Potatoes 25 oz
- Semi-Smoked Sausage 5 pieces
- Parsley to taste
- Quail Egg 10 pieces
- Olive Oil 3 tablespoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Finely chop half of the tomatoes and mix with finely chopped green onions, parsley, and garlic, then dress with olive oil and lemon juice, and set aside.
Step 2
Fry the bacon slices until crispy, blot with paper towels to remove excess fat, and let cool.
Step 3
Cut the remaining tomatoes into large cubes and remove the liquid part (the center). Mix the boiled, coarsely chopped potatoes, quartered eggs, and tomatoes, dress with salsa, and mix well.
Step 4
It is best to serve immediately and in portions, crumbling a bit of bacon on top of each salad plate.
