
Salad 'Grutsam' with Roasted Meat, Grapes, Tomatoes, and Croutons

Description
The mass content of ingredients for the meat marinade can be slightly more or less than the specified amount, depending on the size and shape of the piece of meat — the meat should be completely covered with dried dill, dried basil, sour cream, adjika, and fully coated with white balsamic vinegar.
Ingredients
- Garlic 5 cloves
- Fresh basil leaves 6 tablespoons
- Sour Cream 3 tablespoons
- Adjika 5 tablespoons
- Tomatoes 2 pieces
- French Baguette ½ piece
- Salt a pinch
- Onion 1 piece
- Dried Dill Stems 3 tablespoons
- Merlot Grapes 10 oz
- White Balsamic Cream 5 tablespoons
- Safflower Oil 3 tablespoons
- Lamb Neck Fillet 15 oz
Step-by-Step Guide
Step 1
Prepare the marinade for the meat: salt the meat by rubbing salt all over the piece. Crush 3 cloves of garlic in a garlic press and rub it into the entire piece of meat. Let the meat rest for about 15 minutes.
Step 2
Rub dried dill into the entire piece of meat, then rub in dried basil. Let the meat rest for another 15 minutes.
Step 3
Coat the entire piece of meat with sour cream, then with adjika. Let the meat rest for another 15 minutes.
Step 4
Add white balsamic vinegar, coat the meat in it, and let it marinate for about 1 hour.
Step 5
Prepare the croutons: cut the baguette into cubes without removing the crust. In a skillet, heat 3 tablespoons of sunflower oil (you may need more oil; it should completely cover the bottom of the skillet), and sauté 2 minced cloves of garlic until browned. Remove the garlic from the skillet, leaving the sunflower oil, and add the baguette cubes. Sauté them until golden brown, allowing the oil to soak into the pieces of baguette.
Step 6
Slice the onion into rings, place it in a baking bag, then add the meat, coating it in the onion. Place the baking bag with the meat in a baking dish or on a baking sheet and put it in an oven preheated to 355°F. Roast the meat for 40 minutes in a closed bag and then another 40 minutes with the top of the bag opened.
Step 7
Remove the meat from the oven. Allow it to cool.
Step 8
Slice the meat, add the chopped tomatoes, croutons, and halved, pitted grapes (the amount of grapes, tomatoes, and croutons can be adjusted to taste).
