Ingredients
- Salad Potatoes 0 lbs
- Asparagus 10 pieces
- Spanish onions ¼ head
- Chopped Sage Leaves 2 tablespoons
- Olive Oil 4 tablespoons
- Champagne Vinegar 1 tablespoon
- Dijon Mustard ½ teaspoon
- Garlic ½ clove
- Salt 1 teaspoon
- Ground Black Pepper ¼ teaspoon
- Brown Sugar a pinch
Step-by-Step Guide
Step 1
Peel the potatoes and cut them into small pieces. Boil in boiling water until tender (about 8-10 minutes). Then add the chopped asparagus and cook for another 5 minutes. Drain and let cool.
Step 2
In a small jar, combine olive oil, vinegar, mustard, minced garlic, salt, pepper, and sugar. Close the lid and shake well.
Step 3
In a large bowl, place the warm potatoes and asparagus, thinly sliced onion, and parsley. Drizzle with the dressing and gently mix. Serve warm or cold.
