Roasted Vegetable Salad with Feta
Ingredients
- Courgette ⅓ piece
- Orange Bell Peppers 1 piece
- Yellow Cherry Tomatoes 6 pieces
- Romaine lettuce ½ piece
- Feta cheese 5 oz
- Olive Oil 2 tablespoons
- Ground Black Pepper to taste
- Fresh basil leaves to taste
- Dried Chamomile to taste
- Garlic ½ clove
- Balsamic Vinegar 1 teaspoon
Step-by-Step Guide
Step 1
Grill the pepper for 20 minutes. Place it in a bag, tie it, and let it cool for 15 minutes.
Step 2
Cut the zucchini into strips and grill for 10 minutes (until soft).
Step 3
Cut the tomatoes into quarters, and the feta into cubes. Tear the lettuce into small pieces by hand.
Step 4
Remove the pepper from the bag, and peel off the seeds and skin. Cut into long strips.
Step 5
For the dressing, mix the oil and balsamic vinegar, add ground pepper and herbs, and minced garlic. Add a little salt.
Step 6
On plates, arrange the lettuce leaves, pepper, tomatoes, zucchini, and drizzle with the dressing. Top with feta pieces.
