- Olive Oil ¼ cup
- Minced garlic 1 clove
- Zucchini 2 pieces
- Squash 2 pieces
- Tomatoes 2 pieces
- Corn on the cob 1 piece
- White Onion 1 head
- Basil 0 oz
- Eggplants 2 pieces
Step-by-Step Guide
Step 1
To prepare the roasted vegetable salad with basil, preheat the oven to medium heat. Mix the oil and garlic in a large bowl.
Step 2
Place the vegetables on a baking sheet. Lightly coat with the garlic oil; sprinkle with salt and pepper.

Roast the vegetables, turning frequently, until they are slightly charred and tender (about 10 minutes). Choose larger eggplants for this dish and cut them lengthwise.
