Ingredients
- Orange Bell Peppers 3 pieces
- Courgette 4 pieces
- Marinated cherries 15 oz
- Lemon ½ piece
- Spinach 5 oz
- Couscous 10 oz
- Feta cheese 5 oz
Step-by-Step Guide
Step 1
Preheat the oven to 430°F.
Step 2
Arrange the sliced bell peppers and zucchini on a baking sheet. Drizzle with oil and sprinkle with spices. Bake for 15 minutes.
Step 3
Add the cherry tomatoes, lemon zest, and juice, and bake for another 15 minutes.
Step 4
Let cool slightly and mix with the spinach leaves.
Step 5
Prepare the couscous.
Step 6
Divide the couscous into 4 small bowls, top with the roasted vegetables. Generously sprinkle with crumbled feta cheese.
