Roasted Tomato Salad
Ingredients
- Tomatoes 12 pieces
- Basil to taste
- Garlic 2 cloves
- Olive Oil 4 tablespoons
- Olives stuffed with lemon 24 pieces
- Salt to taste
- Balsamic Vinegar 2 tablespoons
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Cut each tomato in half and place them cut side up on a baking sheet. Season with salt and pepper. Evenly sprinkle with garlic and drizzle with olive oil. Top each with a basil leaf (the leaves should be coated with oil on both sides).
Step 2
Bake on the top rack of the oven for about 1 hour at 390°F (392 degrees Fahrenheit). Let cool.
Step 3
Before serving, transfer the tomatoes to a plate, garnish with basil, and drizzle with oil mixed with vinegar. The final touch is an olive on each tomato. Serve with crispy bread.
