Roasted Pumpkin Salad with Feta
Ingredients
- Pumpkin 20 oz
- Feta cheese 5 oz
- Chopped Cilantro (Coriander) ½ bunch
- Ginger 1 teaspoon
- Balsamic sauce to taste
- Salt to taste
- Pine nuts to taste
- Herbs de Provence to taste
Step-by-Step Guide
Step 1
Cut the pumpkin into small pieces, drizzle with olive oil, sprinkle with a mixture of herbs de Provence (or oregano), and roast for 30 minutes at 355°F.
Step 2
Cut the feta cheese into 1 cm cubes, peel and grate 1 cm of ginger. Chop the cilantro.
Step 3
Toast the pine nuts in a pan. Alternatively, you can use 80 g of black olives, halved.
Step 4
Combine the pumpkin with feta, ginger, and cilantro, season with salt to taste, sprinkle with nuts, and drizzle with balsamic sauce.
