Roasted Beet Salad with Walnuts and Goat Cheese
Ingredients
- Yellow Beets 9 pieces
- Butter 1 tablespoon
- Peeled chestnuts 5 oz
- Maple syrup 2½ tablespoons
- Salt to taste
- Ground Black Pepper to taste
- Goat cheese 5 oz
- Dijon Mustard 1 teaspoon
- White Balsamic Cream ¼ cup
- Honey 1 tablespoon
- Olive Oil ¾ cup
- Chives 3 tablespoons
Step-by-Step Guide
Step 1
Preheat the oven to 390°F. Rinse the beets well and place them in a baking dish. Roast for about 45 minutes to 1 hour until tender. Cool and peel.
Step 2
Melt the butter in a skillet and add the walnuts. Toast over medium heat for about 2 minutes, shaking occasionally. Then add the maple syrup, season with salt and pepper, and remove from heat.
Step 3
In a bowl, mix the vinegar, mustard, honey, olive oil, finely chopped chives, salt, and pepper.
Step 4
Thinly slice the beets into rounds and arrange them on 4 plates. Top with walnuts and goat cheese. Drizzle with the dressing and serve immediately.
