Roasted Beet Salad with Mint Dressing
Ingredients
- Canned Baby Beets 30 oz
- Olive Oil ¼ cup
- Spanish onions 5 oz
- Honey ½ teaspoon
- Dijon Mustard ½ teaspoon
- White Balsamic Cream 3 tablespoons
- Mint Leaves 0 oz
- Ocean salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Preheat the oven to 390°F. Place the beets in a heatproof dish and cover with a lid or foil. Roast for about 1.5 hours until tender. Let cool.
Step 2
Peel the beets and cut them into small cubes. Transfer to a bowl.
Step 3
In a small bowl, mix finely chopped red onion, olive oil, vinegar, mustard, honey, finely chopped mint, salt, and pepper. Add to the beets and toss.
