- Mixed salad greens 5 oz
- Feta cheese 5 oz
- Olive Oil 0 fl oz
- Dijon Mustard 0 oz
- Balsamic Vinegar 0 fl oz
- Fresh Mint 1 bunch
- Beetroot 6 pieces
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Roast the beets in foil until tender, checking them with a skewer.
Step 2
While the beetroot is roasting, prepare the marinade: mix the mustard, olive oil, and balsamic vinegar with salt and black ground pepper until emulsified.
Step 3
Peel the slightly cooled beets and cut them into wedges, then mix with the marinade and set aside until completely cooled.
Step 4
Combine the salad mix with mint leaves, then add diced feta cheese and slices of pickled beetroot.
Step 5
Dress the salad with olive oil and a splash of vinegar-mustard dressing.
