
Roasted Beet Salad with Arugula, Swiss Chard, and Goat Cheese

Ingredients
- Yellow Beets 4 pieces
- Goat cheese 5 oz
- Mixed salad greens 4 cups
- Olive Oil 0 fl oz
- Spanish onions 1 head
- Dried Rosemary 1 tablespoon
- White Balsamic Cream 5 fl oz
- Ocean salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a bowl, mix olive oil, vinegar, oregano, salt, and pepper.
Step 2
Preheat the oven to 375°F. Place the beets in a heatproof dish and drizzle with half of the olive oil. Cover with foil and bake for about 1.5 hours until tender. Cool and peel. Cut into small cubes.
Step 3
On plates, arrange the salad greens, top with the beets and thinly sliced onion. Drizzle with the dressing and sprinkle with goat cheese.
