Rice Salad with Red Beans, Corn, and Cherry Tomatoes
Ingredients
- Rice 5 oz
- Canned Corn 10 oz
- Canned Baby Beets 15 oz
- Orange Bell Peppers 2 pieces
- Marinated cherries 5 oz
- Olive Oil 0 fl oz
- Sweet Red Onion 1 head
- Malt Vinegar 0 fl oz
- Salt to taste
- Ground Black Pepper to taste
- Dijon Mustard 0 oz
Step-by-Step Guide
Step 1
Cook the rice and let it cool.
Step 2
Add the corn, beans, quartered cherry tomatoes, diced bell pepper, and onion. Mix well.
Step 3
For the dressing, mix the olive oil in a shaker with vinegar (or lemon juice), mustard, salt, and pepper.
Step 4
You can add chopped shallots to the sauce. Or finely chop 1 clove of garlic. But both if you don't have work tomorrow :-)
Step 5
You can add finely chopped parsley (leaves).
