Rice and Lentil Salad with Aromatic Dressing
Ingredients
- Olive Oil 2 tablespoons
- Champagne Vinegar 2 tablespoons
- Shallot 1 head
- Paprika ½ teaspoon
- Dijon Mustard 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
- Basmati rice 1 cup
- Lentils ¾ cup
- Carrot 10 oz
- Chopped Sage Leaves 2 tablespoons
Step-by-Step Guide
Step 1
Cook the rice and lentils in boiling water until done. Drain and cool. Transfer both to a bowl.
Step 2
Add grated carrot and parsley. Mix well.
Step 3
In a small bowl, combine olive oil, vinegar, finely chopped shallot, mustard, and paprika. Season with salt and pepper. Drizzle over the salad and mix.
