Ingredients
- Rhubarb 20 oz
- Sugar 5 oz
- Oranges 2 pieces
- Ginger 0 oz
- Natural Yogurt 20 fl oz
Step-by-Step Guide
Step 1
Peel the rhubarb from its thin skin and cut it into 2 cm pieces. Grate the zest of one orange and squeeze the juice from both oranges.
Step 2
Combine sugar with 50 ml of water and heat in a saucepan until it lightly caramelizes to a light brown color. Add the rhubarb to the saucepan, mix it with the sugar, and simmer for one to two minutes, stirring. Then add orange juice, finely grated ginger, and orange zest, and cook the compote on low heat for ten to fifteen minutes. Let it cool, mix with yogurt, and serve.
