Red Pepper and Mozzarella Salad
Ingredients
- Tomatoes 2 pieces
- Orange Bell Peppers 2 pieces
- Yellow Cherry Tomatoes 5 oz
- Olive Oil 6 tablespoons
- Melted Cheese 2 pieces
- Malt Vinegar 4 teaspoons
- Basil 1 bunch
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Place the cherry tomatoes in a deep baking dish, coat with 2 tablespoons of olive oil, season with salt and pepper, and bake in a preheated oven at 300°F for 15 minutes.
Step 2
Sauté the bell pepper in a pan, place it in a plastic bag for 5 minutes, then peel off the skin and seeds, and chop coarsely.
Step 3
Cut the large tomatoes into wedges, removing the pulp and seeds. Slice the mozzarella into rounds.
Step 4
Mix the olive oil, wine vinegar, a pinch of salt, and pepper, add half of the basil leaves, and mix again.
Step 5
Arrange the bell pepper, tomatoes, mozzarella, and cherry tomatoes on a platter, drizzle with the dressing, and sprinkle with the remaining basil leaves.
