Radicchio with Fig and Ginger Vinaigrette

Ingredients

  • Endive 1 bunch
  • Radicchio Salad 1 bunch
  • Oranges 3 pieces
  • Spanish onions ½ head
  • Olive Oil 3 tablespoons
  • Green Figs 8 pieces
  • Red Wine Vinegar 1 teaspoon
  • Ground Cinnamon a pinch
  • Orange juice concentrate 2 tablespoons
  • Pomegranate Seeds 2 pieces
  • Candied fruits 0 oz

Step-by-Step Guide

Step 1

Wash the radicchio and endive and dry them well. Cut very large leaves into pieces and place them in a bowl.

Step 2

Segment the oranges and cut out only the flesh, removing all the white parts. Add to the salad.

Step 3

Add the onion, sliced into thin rings, and the figs, cut into quarters. Whisk together the oil, vinegar, cinnamon, orange juice, and finely chopped ginger in a small bowl. Season with salt and drizzle over the salad. Gently toss.

Step 4

Divide the salad among plates and generously sprinkle with pomegranate seeds.
