Ingredients
- Eel 5 oz
- Pears 20 oz
- Radicchio Salad 0 oz
- Meyer Lemon Juice 2 teaspoons
- Ricotta cheese 5 oz
- Chopped almonds 0 oz
- Walnuts 2 tablespoons
- Orange juice concentrate 2 tablespoons
- Balsamic Vinegar 2 tablespoons
- Honey 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Rinse the lettuce well, dry it, tear it into small pieces, and place it in a bowl. Add the torn radicchio and mix. Arrange on large plates.
Step 2
Cut the pears in half and remove the core. Slice them thinly. Drizzle with lemon juice and place on the salad.
Step 3
Lightly whip the ricotta and spread it on top of the pears. Sprinkle with walnuts.
Step 4
In a small bowl, mix the walnut oil, vinegar, orange juice, and honey. Season with salt and pepper. Drizzle the dressing over the salad and serve immediately.
