Radicchio salad with bread dressing
Ingredients
- White bread 5 oz
- Olive Oil ½ cup
- Salt to taste
- Ground Black Pepper to taste
- Minced garlic 1 clove
- Wine Vinegar 2 tablespoons
- Dijon Mustard 1 teaspoon
- Sugar 1 teaspoon
- Radicchio Lettuce 1 bunch
- Shallots 2 heads
Step-by-Step Guide
Step 1
The bread should be sourdough (remove the crust, tear the crumb into small pieces (about 1 cup), separately.
Step 2
Preheat the oven to 220˚C (428˚F). Mix the bread with 1 tablespoon of oil on a rimmed baking sheet, season with salt and pepper. Bake until golden brown for 8–10 minutes.
Step 3
In a blender, combine the garlic, vinegar, mustard, sugar, remaining bread, and 2 tablespoons of water; let sit for 5 minutes to soften the bread. Restart the blender, gradually add the remaining ⅓ cup of oil; blend until smooth for about 2 minutes (the bread should blend into the dressing, giving it thickness, flavor, and texture); season with salt and pepper.
Step 4
In a large bowl, combine the radicchio, shallots, croutons, and dressing; season with salt and pepper.
