Ingredients
- Quinoa 5 oz
- Olive Oil 3 tablespoons
- Red Onion 1 head
- Chili Pepper 2 pieces
- Zucchini 5 oz
- Garlic 3 cloves
- Lemon Zest 1 tablespoon
- Lemon Juice 1 tablespoon
- Sugar a pinch
- Parsley leaves to taste
- Feta cheese 5 oz
Step-by-Step Guide
Step 1
Cook the quinoa according to the package instructions, then drain and set aside.
Step 2
Meanwhile, preheat the oven to 180°C. Mix the onion and chili pepper with 1 tablespoon of oil, season, and then roast for 15 minutes.
Step 3
Combine the zucchini and garlic with the remaining vegetables and place in the oven for another 15 minutes.
Step 4
Peel the garlic and mix it with the seasoning. Add the remaining oil, lemon juice, and zest, and season with sugar to taste.
Step 5
Sprinkle over the quinoa and mix together with the roasted vegetables and parsley.
Step 6
Crumble the feta cheese, gently mix again, and serve.
