Quinoa Salad with Avocado
Ingredients
- Quinoa 10 oz
- Chicken Broth 10 fl oz
- Thyme 1 sprig
- Butter 0 oz
- Cucumbers 5 oz
- Tomatoes 5 oz
- Avocado 1 piece
- Canned Corn 5 oz
- Olive Oil 0 fl oz
- Lime 1 piece
- Salt to taste
- Ground Black Pepper to taste
- Cilantro to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Pour the broth over the quinoa, add a pinch of salt, a sprig of thyme, and the butter, bring to a boil and cook for 15–20 minutes until ready.
Step 3
Drain the cooked quinoa in a sieve, dry it, and let it cool.
Step 4
Dice the cucumbers into 5 mm cubes.
Step 5
Remove the seeds from the tomatoes and dice them into the same size cubes.
Step 6
Cut the avocado in half, remove the pit, scoop out the flesh from the skin with a spoon, and dice the flesh into cubes the same size as the cucumbers and tomatoes.
Step 7
Mix the quinoa with the prepared vegetables.
Step 8
Add the canned corn.
Step 9
Dress the salad with olive oil and lime juice, season with salt and pepper to taste.
Step 10
Serve the quinoa salad garnished with cilantro leaves.
