Quinoa Salad
Ingredients
- Eggplant 1 piece
- Quinoa 1½ cups
- Olive Oil 3 tablespoons
- Fresh Spinach Leaves 10 oz
- Fat-free feta cheese 0 oz
- Garlic 2 cloves
- Ground Black Pepper to taste
- Oregano to taste
Step-by-Step Guide
Step 1
Cook the quinoa, slice the eggplant into strips, crush the garlic, and crumble the feta.
Step 2
Drizzle the eggplant with 2 tablespoons of oil, season with pepper, and add oregano. Sauté the vegetables in a pan until golden.
Step 3
In another pot, heat the oil and sauté 1 clove of garlic over low heat.
Step 4
Increase the heat, add the eggplant and spinach. Stir and cook for 1.5 to 2 minutes.
Step 5
Remove from heat, add the quinoa and remaining garlic. Sprinkle with feta.
