Step-by-Step Guide
Step 1
Slice the onion into feathers, add sugar, salt, and lemon juice, and let it marinate for half an hour.
Step 2
Cook the quinoa and let it cool.
Step 3
Dice the tomatoes into small cubes.
Step 4
Mix the grains with the tomatoes, finely chopped cilantro, and marinated onion. Dress with olive oil and place in the center of the plate, surrounding it with arugula.
