A wonderful salad in the antipasti style, perfect as a starter before a main dish like spaghetti, etc. If you have a jar of marinated artichokes sitting in your fridge and don't know what to do with it—believe me, you have a great chance to turn that jar into a delicious salad. Here’s option number 1.
Ingredients
- Marinated cherries 5 oz
- Canned White Asparagus 1 can
- Mint ½ bunch
- Scallions 4 stalks
Step-by-Step Guide
Step 1
Drain the oil from the artichokes.
Step 2
Cut the cherry tomatoes in half.
Step 3
Remove the mint leaves from the stems.
Step 4
Finely chop the green onions.
Step 5
Mix all the ingredients and half of the mint in a salad bowl and top with the remaining leaves.
