Protein Salad with Chicken and Mushrooms
Ingredients
- Pickled Chanterelles 5 oz
- Skin-On Chicken Breasts 5 oz
- Courgette 1 piece
- Onion ½ piece
- Cottage cheese 3 tablespoons
- Soy Sauce to taste
- Mustard Greens to taste
- Olive Oil to taste
- Green Butter ½ bunch
Step-by-Step Guide
Step 1
Slice the onion into half rings and sauté in oil until soft. Add the chopped champignon mushrooms and fry until cooked. Set aside to cool.
Step 2
Cut the chicken breast into very small pieces, season with pepper, and fry in the same oil until golden brown.
Step 3
While the chicken and mushrooms are cooling, dice the cucumber. Tear the lettuce by hand.
Step 4
Prepare the dressing. Mash the cottage cheese (it should have a creamy consistency) with mustard and soy sauce until smooth.
Step 5
Once everything has cooled, mix all the ingredients in a deep bowl.
