Ingredients

  • Salad Potatoes 5 pieces
  • Parsley 0 oz
  • Tarragon 2 tablespoons
  • Rosemary 1 tablespoon
  • Champagne Vinegar 2 tablespoons
  • Dijon Mustard 1 teaspoon
  • Garlic 2 cloves
  • Olive Oil to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Boil the potatoes in their skins, then cool. Cut into medium-sized cubes (not too small, so the fluffy potatoes don't turn into mush). Place in a salad bowl.

Step 2

In a separate bowl, mix the mustard, vinegar, and oil (use oil to taste, but not too much). Squeeze in the garlic, mix well for a minute or two, then strain the mixture through a fine sieve to remove all the garlic bits. Stir in the herbs and salt. It's best to use fresh herbs, but dried can be substituted; if using dried, let the oil mixture steep. Mix well.

Step 3

Dress the potatoes. Toss to combine. Let sit for about 10 minutes before serving.
