Description

In Scandinavian countries, fish is served on New Year's Eve. The silver scales symbolize financial prosperity, so in the coming year, money will flow into your hands. Otherwise, the Finnish table is strikingly modest: they honor festive dishes like noodle soup with sausages, potato and rutabaga casserole, and potato salad, similar to our Olivier salad but without any meat.

Ingredients

  • New Potatoes 20 oz
  • Yogurt powder 5 oz
  • Mint Leaves 0 oz
  • Courgette 1 piece
  • Garlic 2 cloves

Step-by-Step Guide

Step 1

Boil the potatoes for 10 minutes until soft, then let them cool.

Step 2

Mix the yogurt, finely chopped cucumber, finely chopped mint, and minced garlic. Combine with the cooled potatoes. Season with salt and pepper and serve.
