Potato Salad with Green Beans and Lemon Dressing
Ingredients
- New Potatoes 25 oz
- Turnips 1 bunch
- Chinese green beans 10 oz
- Scallions 1 bunch
- Lemon 2 pieces
- Olive Oil 6 tablespoons
- Salt to taste
- Ground Black Pepper to taste
- Basil 1 bunch
- Shelled pumpkin seeds 0 oz
Step-by-Step Guide
Step 1
Boil the potatoes in salted boiling water until tender, about 20 minutes. Drain, cool, and slice into small rounds. Transfer to a large bowl.
Step 2
Trim the ends of the green beans and cut into small pieces. Boil the beans in salted boiling water until tender, about 6 minutes. Drain and rinse under cold water. Dry and add to the potatoes.
Step 3
To the potatoes and beans, add the chopped radishes and finely chopped green onions. Mix well.
Step 4
In a small bowl, combine the grated zest of 2 lemons, the squeezed lemon juice, and olive oil. Season with salt and pepper to taste. Drizzle the dressing over the vegetables and mix well. Sprinkle with pumpkin seeds and basil and serve.
