
Potato Salad with Celery

Apple cider vinegar can also be used instead of wine vinegar.
Ingredients
- Salad Potatoes 20 oz
- Celery stalk 4 stalks
- Olive Oil 2 tablespoons
- Dijon Mustard 1 tablespoon
- Champagne Vinegar 1 tablespoon
- Scallions 3 pieces
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Cut the potatoes into cubes about 1.5 cm on each side.
Step 2
Boil in salted water for about 15–17 minutes until tender. It's important not to overcook the potatoes. Drain and let them dry.
Step 3
Slice the celery into thin pieces.
Step 4
Prepare the dressing. In a bowl, mix the mustard, oil, and vinegar, whisking with a fork until emulsified.
Step 5
In a salad bowl, combine the hot potatoes with the celery, chopped onions, and dressing. Serve immediately.
