Potato Salad with Caramelized Onions and Lemon Mayonnaise
Ingredients
- Olive Oil 1 tablespoon
- Spanish onions 3 pieces
- New Potatoes 20 oz
- Bacon 2 pieces
- Chives 0 oz
- Mayonnaise 5 oz
- Lemon ½ piece
- Dijon Mustard 2 teaspoons
- Sour Cream 1 tablespoon
Step-by-Step Guide
Step 1
Heat the oil in a large skillet, add finely chopped onion, and sauté over low heat for 40 minutes until it becomes soft and starts to caramelize.
Step 2
Cut the potatoes into pieces and boil in salted water until cooked. Transfer to a large bowl along with the onions and chopped chives, and mix well.
Step 3
Meanwhile, fry the bacon on a grill or in a skillet until crispy. Transfer to a paper towel. Then cut into small pieces.
Step 4
Mix the mayonnaise, mustard, lemon juice, and sour cream. Drizzle over the salad and mix well. Serve on 2 plates and sprinkle with bacon and chives.
