Ingredients
- Salad Potatoes 20 oz
- Capers 3 tablespoons
- Champagne Vinegar 3 tablespoons
- Chopped Sage Leaves ½ cup
- Olive Oil 4 tablespoons
- Coarse Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Cut the potatoes into medium-sized pieces, leaving the skin on (preferably with thin skin like young potatoes). Place them in boiling salted water and cook until tender.
Step 2
Drain the water and place the potatoes on a baking sheet. Drizzle with vinegar and sprinkle with freshly ground black pepper. Let sit for 5 minutes.
Step 3
Then, in a large bowl, combine the potatoes, capers, and parsley. Dress with olive oil. Season with salt and pepper to taste.
