Potato and Asparagus Salad
Ingredients
- New Potatoes 5 lbs
- Canned White Asparagus 20 oz
- Cornichons 5 oz
- Fresh Mint 3 tablespoons
- Olive Oil 5 fl oz
- Table Mustard 2 tablespoons
- White Balsamic Cream 5 tablespoons
- Powdered Sugar a pinch
Step-by-Step Guide
Step 1
Wash the potatoes, cut them in half, and boil in salted water, then drain.
Step 2
In a large pot of salted water, add the asparagus, bring to a boil, and cook for 2 minutes. Drain and rinse with cold water to preserve the color of the asparagus.
Step 3
Combine the potatoes, asparagus, sliced cornichons, and mint in a bowl, season, and mix.
Step 4
Prepare the dressing: mix the oil, vinegar, mustard, and powdered sugar in a jar, close it, and shake. Drizzle over the salad.
