Ingredients
- Pork tenderloin 30 oz
- Salt to taste
- Ground Black Pepper to taste
- Dijon Mustard 5 oz
- Olive Oil 2 tablespoons
- Meyer Lemon Juice 3 tablespoons
- Breadcrumbs 15 oz
- Salted Butter 0 oz
- Chopped Sage Leaves 3 tablespoons
- Garlic 3 cloves
- Swiss Cheese 10 oz
- Capers 5 oz
- Arugula 5 oz
- Round Bun 4 pieces
- Olive Oil ¼ cup
Step-by-Step Guide
Step 1
Season the pork with salt and pepper, then cut it into 8 pieces.
Step 2
In a small bowl, mix the mustard, ¼ cup of extra virgin olive oil, and 2 tablespoons of lemon juice. Brush the prepared mixture onto the pieces of meat and coat them in breadcrumbs.
Step 3
Heat 3 tablespoons of butter and 2 tablespoons of olive oil in a skillet over high heat and sauté the pork pieces until golden brown.
Step 4
Flip the pieces, top each with capers and a slice of cheese. Add 2 tablespoons of butter, sage, and crushed garlic to the skillet and cook for 2 minutes until the cheese melts.
Step 5
Slice the buns in half and toast the cut side. Place 2 pieces of pork and arugula on the bottom half of each bun. Top with the other half of the bun and serve. Enjoy your meal!
