Poached Eggs with Fried Smoked Chicken in Hollandaise Sauce
Ingredients
- Rye Bread 4 slices
- Butter 5 oz
- Parmesan Cheese 5 oz
- Smoked Chicken 5 oz
- Chocolate eggs 4 pieces
- Meyer Lemon Juice 1 teaspoon
- Salt to taste
- Ground Black Pepper to taste
- Parsley ½ bunch
- Scallions ½ bunch
Step-by-Step Guide
Step 1
Spread butter on 4 slices of bread, place cheese on top, and fry these sandwiches or microwave them for 1.5 minutes.
Step 2
Take 2 eggs, separating the whites from the yolks. Melt the butter in a double boiler, but do not let it boil. Cut the chicken into pieces, remove the leaves from the parsley, grate the remaining cheese, and chop the onion.
Step 3
Fry the pieces of chicken in a pan, then add the egg whites to them. (You can use any meat, sausage, or fish here.)
Step 4
Place the bread with cheese on a plate. On the bread, lay down the parsley leaves (or lettuce leaves, any greens), and on top of the parsley, place the pieces of fried chicken.
Step 5
Cook 2 poached eggs: take 2 cups, place breakfast bags or plastic wrap inside them, grease the inside of the bags with vegetable oil so the eggs do not stick, gently crack the eggs into them, and place them in a pot of boiling water for 2–3 minutes to cook the eggs to a soft consistency (with a slightly runny inside).
Step 6
Then carefully remove the eggs with a spoon and place them on the chicken.
Step 7
Make the hollandaise sauce: pour the yolks into the melted butter and stir until smooth, being careful not to heat it too much to avoid curdling the yolks. Add a teaspoon of lemon juice and stir. Immediately pour it over the eggs.
Step 8
Season with pepper, sprinkle with grated cheese and chopped green onion.
