
Plum Lemonade with Thyme and Sage

Description
You can leave the plum with the pit, or you can take the time to remove the pit. The taste will not change.
Ingredients
- Brown Sugar 5 oz
- Green Gage Plum 10 oz
- Thyme 4 sprigs
- Chopped Sage Leaves 3 pieces
- Lime 1 piece
Step-by-Step Guide
Step 1
Squeeze the juice from the lime and set the juice aside.
Step 2
Pour 100 grams of brown sugar into 150 ml of water.
Step 3
Place in a small saucepan, add 4 sprigs of thyme, and bring to a boil until the sugar is completely dissolved.
Step 4
Add the plums and sage, and simmer on low heat for about 10 minutes, then add the lime juice, cover, and let steep. Ideally overnight, but it can be done for 3-4 hours.
Step 5
Dilute the syrup to a volume of 1-1.5 liters with water (to taste).
