Ingredients

  • Pineapple ½ piece
  • Frozen black currant puree 10 oz
  • Mint 1 bunch
  • Soy Vanilla Milk 2 cups
  • Agave Syrup to taste

Step-by-Step Guide

Step 1

If you are using frozen black currants instead of fresh ones, you can either thaw them overnight on the top shelf of the refrigerator or add them frozen; the smoothie will be cold but just as delicious.

Step 2

Peel the half pineapple, remove the core, and cut it into medium pieces.

Step 3

Tear the mint leaves from the stems, setting aside the tops for garnish.

Step 4

In a blender, combine the chopped pineapple, black currants, mint leaves, and pour in the soy milk (you can substitute with regular milk or any other milk of your choice; the fat content of the milk is also up to you).

Step 5

Blend on high speed for 5 minutes.

Step 6

Taste with a teaspoon; if the pineapple is not very sweet, the smoothie may turn out quite sour due to the currants, then add 1 or 2 tablespoons of agave syrup or light honey to taste and blend again.

Step 7

Serve garnished with mint leaves.
