Pig's Ear Salad
Ingredients
- Pork Neck 1 piece
- Duck Fat 0 oz
- Corn Salad 25 oz
- Dry White Wine 2 spoons
- Champagne Vinegar 2 spoons
- Olive Oil 3 spoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Boil the pig's ear in a large amount of water (this will take about one and a half to two hours) until tender, then cool it down and grill until golden brown. Slice it thinly with a sharp knife.
Step 2
In a large skillet, melt the duck fat, add the chopped ear, and sauté, stirring, until crispy.
Step 3
Place the salad leaves in a large bowl, and add the sautéed ear.
Step 4
Pour some wine and vinegar into the skillet where it was cooked and deglaze. Then add olive oil, season with salt and pepper. Stir well.
Step 5
Dress the salad with the prepared dressing and serve.
