Pickled Green Tomato Salad
Ingredients
- Mixed tomatoes of different colors 10 lbs
- Celery salt 20 oz
- Vegetable Oil 15 fl oz
- Vinegar essence 1 cup
- Salt 5 oz
- Onion 0 lbs
- Red Long Chili Peppers to taste
- Garlic 5 oz
- Saffron 1 tablespoon
- Khmeli-suneli 1 tablespoon
- Orange Bell Peppers 0 lbs
Step-by-Step Guide
Step 1
Slice the tomatoes into rounds, sprinkle with salt, and let sit in a cool place for 12–24 hours, then squeeze out the liquid.
Step 2
Chop the onion, garlic, red bell pepper, and celery.
Step 3
Boil the vinegar and sunflower oil, then cool. Add the spices: saffron, coriander, khmeli-suneli, hot pepper, and salt.
Step 4
Mix everything together, let it sit for 2 hours, and then pack into jars. Store in a cool place.
