Description

Instead of sake, you can use dry white wine.

Ingredients

  • Toasted Sesame 1 tablespoon
  • Soy Sauce 1½ tablespoons
  • Cucumbers ½ piece
  • Mirin 1 teaspoon
  • Sake 1 teaspoon
  • Rice Vinegar for Sushi 1 teaspoon
  • Sugar ½ teaspoon

Step-by-Step Guide

Step 1

Toast the sesame seeds in a preheated skillet for 1–2 minutes.

Step 2

Cut the cucumber in half lengthwise, then into eight pieces. Remove the seeds, cut into 4 cm pieces, and place in a bowl.

Step 3

Mix the soy sauce, mirin, sake, rice vinegar, and sugar. Pour the marinade over the cucumber and let it sit for half an hour, then stir again and let it sit for another approximately half an hour.

Step 4

Before serving, dress the salad with lightly crushed sesame seeds.
