Pickled Celery and Avocado Salad

Ingredients

  • Celery stalks 6 pieces
  • Celery Leaves 5 pieces
  • Radishes 2 pieces
  • Salt to taste
  • Ground Black Pepper to taste
  • Lemon Juice ½ cup
  • Vegetable Oil 3 tablespoons
  • Avocados 2 pieces
  • Kalamata olives 0 oz

Step-by-Step Guide

Step 1

Soak the celery and radishes in a large bowl of ice water for 10 minutes. Drain the water and season with salt and pepper. Drizzle with lemon juice and mix well. Let it marinate for 10 minutes.

Step 2

Add the vegetable oil and mix. Cut each avocado half into 4 wedges and fold into the celery and radish mixture. Transfer the salad to a plate and top with olives and celery leaves before serving.
