Pepper and Mozzarella Sandwich

Ingredients

  • Olive Oil ⅓ cup
  • Orange Bell Peppers 3 pieces
  • Fresh basil leaves 2 cups
  • French Baguette 1 piece
  • Salt to taste
  • Melted Cheese 15 oz

Step-by-Step Guide

Step 1

Preheat the oven. Cut the peppers in half, remove the seeds, and place the halves cut side down on a rack. Bake for 15 minutes until the skin starts to char. Flip and bake for another 5 minutes.

Step 2

Place the hot pepper halves in a paper bag, let them sit for about 10–15 minutes, then remove the skin.

Step 3

In a blender or food processor, puree the flesh, adding salt, olive oil, and basil. Leave a few slices whole.

Step 4

Slice the baguette lengthwise and remove some of the inside. Place mozzarella slices in the top half and the basil and pepper puree in the bottom half, then join the two halves. You can add whole slices of pepper in between for garnish.

Step 5

Cut the baguette into portions.
