Ingredients
- Penne rigate 20 oz
- Peeled Cooked Shrimp 15 oz
- Avocado 2 pieces
- Bacon 5 oz
- Grated Pecorino Pepato Cheese 1 cup
- Mayonnaise 5 oz
- Meyer Lemon Juice 4 tablespoons
- Tomatoes 2 pieces
- Mild Chili Spice 1 teaspoon
- Green Butter 10 oz
Step-by-Step Guide
Step 1
Cook the pasta in boiling water for 8–10 minutes, then drain. Rinse under cold running water to cool it down quickly.
Step 2
Sauté the bacon in a pan until it is completely browned. Drain the fat and chop finely.
Step 3
Chop the tomatoes and avocado finely.
Step 4
In a large bowl, gently mix the pasta, bacon, shrimp, avocado, cheese, mayonnaise, lemon juice, tomatoes, and ground red pepper.
Step 5
Serve on a bed of lettuce leaves.
