Ingredients

  • Mixed salad greens 5 oz
  • Shallot 1 head
  • Champagne Vinegar ½ tablespoon
  • Dijon Mustard 1 teaspoon
  • Honey 1 teaspoon
  • Walnuts 2 tablespoons
  • Vegetable Oil 2 tablespoons
  • Salt to taste
  • Ground Black Pepper to taste
  • Bosc Pear 1 piece
  • Goat cheese 0 oz
  • Peeled chestnuts 0 oz
  • Brown Sugar 0 oz
  • Water 1½ tablespoons

Step-by-Step Guide

Step 1

Prepare the candied walnuts. To do this, dissolve the sugar and salt (a pinch) in water in a small saucepan over medium heat. Cook until the mixture begins to take on a caramel consistency, meaning it darkens, bubbles, and thickens.

Step 2

Add the walnuts (peeled and roasted) to the caramel and stir to ensure each nut is fully coated in caramel.

Step 3

Spread them on parchment paper and separate the nuts with a fork to prevent them from sticking together.

Step 4

Allow to cool completely.

Step 5

Prepare the salad. To do this, whisk together the vinegar, shallot, mustard, honey, walnut oil, and vegetable oil in a small bowl. Season with salt and a small amount of black pepper.

Step 6

Arrange the mixed greens on 2 plates.

Step 7

Core the pear and slice it thinly. Place the slices on top of the salad.

Step 8

Drizzle with the dressing and top with the candied walnuts.

Step 9

Serve immediately.
