
Pear Salad with Arugula and Feta Cheese

Grapeseed oil is chosen for its neutral flavor — olive oil can also be used. Feta cheese can be substituted with Parmesan or another hard, salty cheese.
Ingredients
- Arugula 5 oz
- Conference Pear 2 pieces
- Asian Pear 2 pieces
- Lemon 1 piece
- Dry White Wine 5 fl oz
- Raw cane sugar 1 tablespoon
- Pistachios 0 oz
- Grapeseed Oil to taste
- Ground Black Pepper to taste
- Ocean salt to taste
- Farmers cheese 0 oz
Step-by-Step Guide
Step 1
Gently rinse the arugula leaves in cold water and dry them in a salad spinner.
Step 2
Wash the pears and peel them. Cut them into quarters from top to bottom, removing the core and stem. Slice each quarter crosswise, then cut the resulting pieces lengthwise into half-centimeter fragments. Drizzle with lemon juice.
Step 3
Heat a skillet and pour in enough wine to cover the surface by about an inch. Once the wine is heated, add brown sugar and stir until fully dissolved. Allow the wine to reduce by half.
Step 4
Place the "Conference" pears in the skillet. Stirring gently, cook over high heat until the wine has almost completely evaporated and the pears have darkened and become soft.
Step 5
Slice the cheese into thin pieces.
Step 6
Arrange the arugula on dry plates. Top with 'Conference' pears, fresh 'Chinese' pears, and cheese. Drizzle with oil and splash with lemon juice. Sprinkle with pine nuts, taste, and add pepper and salt if needed.
