Pear, Arugula, Ricotta, and Pancetta Salad
Ingredients
- Honey 1 tablespoon
- Champagne Vinegar 1 tablespoon
- Meyer Lemon Juice ½ tablespoon
- Ocean salt a pinch
- Ground Black Pepper a pinch
- Olive Oil 4 tablespoons
- Pancetta 5 pieces
- Pears 2 pieces
- Arugula 10 oz
- Ricotta cheese 5 oz
Step-by-Step Guide
Step 1
For the vinaigrette, mix the vinegar, honey, lemon juice, salt, and pepper in a small bowl. Then, while whisking, add 3 tablespoons of olive oil.
Step 2
Heat a skillet with the remaining oil and fry the pieces of pancetta for 5 minutes until crispy. Transfer to a paper towel, then cut into small pieces.
Step 3
Cut the pears in half and remove the core. Peel and chop into small pieces.
Step 4
In the bowl with the dressing, add the arugula, pancetta, ricotta, and pears. Mix well. Season with salt and pepper to taste.
