Ingredients
- Farfalle Pasta 20 oz
- Ground Black Pepper ¼ teaspoon
- Olive Oil 1 tablespoon
- Pumpkin 1 piece
- Zucchini 1 piece
- Sun-Dried Tomatoes 5 oz
- Basil leaves 0 oz
- Parsley 0 oz
- Apple Cider Vinegar 2 tablespoons
- Garlic 2 cloves
- Mustard 1 teaspoon
- Dried Oregano 1 teaspoon
- Dried Basil 1 teaspoon
- Salt ½ teaspoon
- Extra virgin olive oil ¼ cup
Step-by-Step Guide
Step 1
Cook the pasta in salted water until al dente and drain. Mix with ground black pepper and olive oil.
Step 2
To prepare the dressing, add vinegar to a blender and close the lid. Turn on the blender and gradually add garlic, mustard, oregano, basil, salt, and black pepper through the opening. Then, slowly pour in the olive oil.
Step 3
Combine the pasta, pumpkin, zucchini, sun-dried tomatoes, basil, and parsley with enough dressing.
Step 4
Pour some additional dressing around the edge of the plate for serving.
